Full-tang five-inch Katsura Santoku culinary blade. Made with Japanese AUS-10 core and reinforced with two layers of forged steel, 60+ Rockwell hardness. Includes three sets of metal pins, mosaic centre pin and presentation box. 

5-inch Blade, 9.8-inch overall, NW 3.25 OZ, HRC 60+ hardness. 

Santoku translates as the “3 virtues”, referring to the 3 types of cuts suited to this blade – slicing, dicing, and mincing. The 5-inch blade has a razor-sharp edge that makes it perfect for fine cuts. This is a knife-making project; you will not receive a finished knife.
